Ingredients:
- ⚫ 1 cup crunchy peanut butter
- ⚫ 1 ripe banana
- ⚫ 1/4 cup maple syrup
- ⚫ 2 tbsp coconut oil (melted)
- ⚫ 4 scoops unflavored collagen powder
- ⚫ 1/2 cup chia seeds
- ⚫ 1/4 cup hemp seed
- ⚫ 2 cups quick oats
- ⚫ 1/3 cup mini chocolate chips
Directions:
1️⃣ In a large bowl, use a stand mixer or hand mixer to beat together the peanut butter, mashed banana, maple syrup, melted coconut oil, and collagen until smooth.
2️⃣ Add the chia seeds, hemp seeds, oats, and chocolate chips. Switch to a large spoon or spatula and fold everything together until fully combined. The mixture will be very soft and moist.
3️⃣ Line a 13×9-inch pan with parchment paper. Transfer the mixture into the pan and press it down firmly and evenly.
4️⃣ Refrigerate for 3–4 hours, or until fully set.
5️⃣ Slice into 12 bars and enjoy! Store in an airtight container in the refrigerator.
