Ingredients:
- ⚫ 1-pound grass-fed ground beef
- ⚫ 1 yellow onion, diced
- ⚫ 1 taco seasoning packet*
- ⚫ 1/4 cup sour cream
- ⚫ 1 1/2 cups shredded Mexican cheese
- ⚫ 4 oz can diced green chiles
- ⚫ 15 oz can black beans, drained and rinsed
- ⚫ 6 corn tortillas
- ⚫ Olive oil spray
- ⚫ Optional toppings: avocados, sour cream, tomato, lettuce, salsa, or cilantro
Directions:
1️⃣ In a medium-high heat sauté pan, cook the beef until browned, breaking it up as it cooks.
2️⃣ Remove beef and set aside, draining excess fat, leaving just enough to sauté the onion.
3️⃣ Sauté the onion for 3-4 minutes, or until translucent. Add the beef back to the pan along with taco seasoning and 1/3 cup of water.
4️⃣ Stir to combine and cook until the liquid is absorbed, then mix in the sour cream. Remove from heat and preheat your oven to 400°F.
5️⃣ Tear the corn tortillas into small pieces and add them to a large mixing bowl, along with the beef mixture, shredded cheese, chiles, and black beans. Mix well.
6️⃣ Spray a 13×9 pan with olive oil and transfer the mixture to the pan, spreading it evenly.
7️⃣ Bake at 400°F for 12-15 minutes or until it’s bubbling and golden.
8️⃣ Top with your favorite toppings and enjoy!
