Ingredients:
Nacho “Cheese” Sauce
- ⚫ 3/4 cup cashews
- ⚫ 2 tbsp fresh lemon juice
- ⚫ 3 tbsp olive oil
- ⚫ 3 tbsp nutritional yeast
- ⚫ 1 tsp onion powder
- ⚫ 1 tsp garlic powder
- ⚫ 3/4 tsp sea salt
- ⚫ 1/2 cup warm water
Nachos
- ⚫ 5oz bag of grain free tortilla chips (I used Thrive Market Lime Flavor)
- ⚫ 1lb grass-fed 90% lean ground beef
- ⚫ 1 taco seasoning packet (I used Siete brand)
- ⚫ 3/4 cup tomato, diced
- ⚫ 1 avocado, peeled and diced
- ⚫ 1 jalapeno pepper, peeled and diced
- ⚫ 1/3 cup loosely packed fresh cilantro leaves
- ⚫ Lime wedges for serving
Directions:
1️⃣ Make the “cheese” sauce: Add all sauce ingredients to a high-speed blender. Blend on high until smooth and creamy. (Note: The texture may vary depending on your blender’s power and size.)
2️⃣ Prepare the beef: In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain any excess fat or liquid. Add the taco seasoning and 1/3 cup water (or follow packet instructions), and simmer until well combined.
3️⃣ Assemble the nachos: Spread tortilla chips evenly on a platter or small baking sheet. Layer with seasoned beef, drizzle with cheese sauce, then top with tomatoes, avocado, and jalapeños.
4️⃣ Garnish & serve: Finish with fresh cilantro and lime wedges. Dig in and enjoy!
