Ingredients:
- ⚫ 3 eggs
- ⚫ 1/2 cup milk
- ⚫ 1 tsp vanilla extract
- ⚫ 2 cups almond flour
- ⚫ 2 scoops unflavored collagen powder
- ⚫ 1 tsp baking powder
- ⚫ 1/4 tsp salt
- ⚫ 2 cups strawberries (halved)
- ⚫ 2 tbsp chia seeds
- ⚫ 10 drops stevia extract
Directions:
1️⃣ In a small saucepan, combine the halved strawberries, water, and stevia. Bring to a gentle boil.
2️⃣ Reduce heat and simmer for 8–10 minutes, stirring occasionally, until the berries begin to break down and the mixture thickens slightly.
3️⃣ Remove from heat, stir in the chia seeds, and mix well. Transfer to the fridge to cool and thicken while you prepare the waffles.
4️⃣ Preheat your waffle maker.
5️⃣ In a large mixing bowl, whisk together the eggs, milk, and vanilla extract. Then add the almond flour, collagen, baking powder, and salt. Stir until the batter is smooth and well combined.
6️⃣ Once your waffle maker is ready, pour about 1/2 cup of batter onto the surface and cook until golden and crisp to your liking.
7️⃣ Repeat with the remaining batter—this recipe makes approximately 4 waffles.
8️⃣ Serve warm and top with your chilled strawberry chia compote. Enjoy!
