Servings: 4
Ingredients:
- ⚫ 1-pound 90/10 grassfed ground beef
- ⚫ Olive oil
- ⚫ 1/2 yellow onion
- ⚫ 1 tsp salt
- ⚫ 1 tsp garlic powder
- ⚫ 1/2 tsp dill
- ⚫ 1/2 tsp pepper
- ⚫ 12 cups mixed greens
- ⚫ 1 cup shredded cheddar cheese
- ⚫ 1 cup tomato, diced
- ⚫ 1/2 cup pickles, drained and diced
- ⚫ Drizzle of your favorite salad dressing*
Directions:
1️⃣ In a pan, brown the ground beef, breaking it into small pieces as it cooks. Drain the excess grease and set the beef aside.
2️⃣ Wipe the pan clean with a paper towel, then heat a drizzle of olive oil. Sauté the yellow onion for 4-5 minutes until soft and fragrant.
4️⃣ Return the beef to the pan and season with salt, garlic powder, dill, and pepper. Stir well to combine.
5️⃣ To serve, divide 3 cups of mixed greens evenly into 4 bowls. Top each with the seasoned beef, shredded cheddar, tomatoes, and pickles.
6️⃣ Finish with a drizzle of your favorite salad dressing and enjoy!
*Notes:
⚫ Choose a salad dressing made without inflammatory oils like soybean or canola oil. Instead, look for options with olive or avocado oil as the base. I personally love using Primal Kitchen dressings on my cheeseburger salads—Ranch and Honey Mustard are my go-to favorites!
Pro Balance Tips:
⚫ These cheeseburger salads make a quick and easy dinner for a family of four, but they’re also perfect for meal prep! Simply prep the veggies in advance, store the beef separately, and when it’s time to eat, reheat the beef, assemble your salad, and enjoy a healthy, delicious lunch!
