
Makes: 24 tots
Ingredients:
- ⚫ 2 cups broccoli, riced*
- ⚫ 2 cups cauliflower, riced*
- ⚫ 2 egg whites
- ⚫ 2 tbsp mayonnaise*
- ⚫ 1/2 cup almond flour
- ⚫ 1/4 cup fresh parsley, chopped
- ⚫ 1 tsp salt
- ⚫ 1/2 tsp garlic powder
- ⚫ 1/2 tsp onion powder
- ⚫ 1/4 tsp black pepper
- ⚫ Parchment paper
- ⚫ Olive oil spray
Directions:
1️⃣ Line an oven tray with parchment paper and lightly spray it with olive oil to prevent the tots from sticking.
2️⃣ In a large mixing bowl, combine all the ingredients thoroughly using your hands.
3️⃣ Using about 1.5-2 tablespoons of the mixture, form a tot in your hands and place it evenly on the parchment paper.
4️⃣ Continue until you’ve used up all the mixture. You should end up with about 24 veggie tots.
5️⃣ Preheat the oven to 400 degrees.
6️⃣ Bake for 20 minutes on the top rack, then flip the tots and continue baking for an additional 5-10 minutes, or until they are perfectly crispy on the outside.
7️⃣ Serve with your favorite dipping sauce—I enjoy using Organic Ranch!
Pro Balance Tips:
⚫ These tots become even crispier and more delicious when made in an air fryer! Simply follow the same instructions but reduce the cooking time slightly if you notice the tots starting to brown too much.

*Notes:
⚫If you’re using fresh broccoli and cauliflower, it’s best to rice the veggies with a food processor. For frozen riced broccoli and cauliflower, be sure to drain and press out any excess liquid before mixing them with the other ingredients.
⚫ When choosing a mayonnaise, steer clear of options that contain inflammatory seed oils like canola, sunflower, or safflower oil. Instead, opt for those made with olive or avocado oil, which are much less inflammatory!
