Ingredients:
- ⚫ 1lb 93/7 ground beef*
- ⚫ 2oz diced sundried tomatoes
- ⚫ 1 large egg
- ⚫ 1/2 cup quick or old-fashioned oats
- ⚫ 1/2 tsp salt
- ⚫ 8 cups baby spinach*
- ⚫ 4oz goat cheese
- ⚫ 1/2 cup pesto
- ⚫ Balsamic glaze*
Directions:
1️⃣ To make burgers, mix together ground beef, sundried tomato, egg, oats and salt.
2️⃣ Create 4 beef patties out of the mixture.
3️⃣ Place on broiler pan and broil for 15 minutes.
4️⃣ Flip each burger and broil another 10 minutes or until center reaches desired cook temperature.
5️⃣ To assemble each salad:
⚫ Place 2 cups baby spinach in each bowl
⚫ Place 1 beef patty on top of spinach
⚫ Top patty with 1oz goat cheese and 2 tbsp pesto
⚫ Drizzle balsamic over entire salad
